R Moore's Salsa Dip
1 can black beans, rinsed 1 large tomato, chopped 1/4 to 1/3 cup cilantro 1/2 medium red onion, chopped 1 small jalapeno, chopped (optional) 2 garlic, minced 2 tablespoons fresh lime juice 1/2 to 1 teaspoon of cider vinegar 1 teaspoon salt 1/4 teaspoon cumin 2 large ripe avocados, 1/2 inch chopped
Mix all ingredients together adding the avocado last. Simply serve with chips.
Hint: When chopping the avocado, cut them in half lengthwise and then pull out the seed. Then cut lines crosswise about a 1/2 inch apart down into the fruit until reaching the rind. Then just spoon out the fruit.
